What is Pavbhaji some say its a delicacy some say its a Bombay street food, but now I think its has become the street food of each corner in most of the cities . You get it more or less every where and frankly speaking I dont like eating Pav Bhaji out in the Market because these street vendors they add less of bhaji and more of Aloo to it so for for me it should not be called as Pavbhaji it should be Pav and aloo bhaji and also the consistency is more or less like gravy.I ate my first pavbhaji when I was in school . we went to our Maternal Aunts house in our vacations and we planned a picnic to India gate in the evening. so me and my cousins were very excited and my Aunts daughter inlaw she made this yummy Pavbhaji for all of us. That was my first introduction to Pavbhaji and that was so yummy that the taste of that Pavbhaji is still in my mouth and she was the one who taught me how to make Pavbhaji. and because my Husband loves eating pavbhaji so how is it possible that if he loves something I will not make it and at my house Pav bhaji is one dish which is been cooked religiously once in a week . and to tease my husband I call it leftover bhaji yes you read it right. Now why I call it leftover bhaji so to make Pavbhaji in weekends what I do I deliberately leave one veggi in my freeze so like if I have purchased peas around 1 kg I will keep approx 250 gm of peas . If I have beans I will keep some 8 to 10 strands of beans and at weekend I have approx 7 to 8 veggies and then I make my Pav bhaji . Now you understand why I call it a left over bhaji. and one more benefit like by making it at home you are sure of the quality and you know that it is completely healthy especially for kids because it has all the nutritious veggies not only Aloo. I make it little thick because we love to relish the flavour of every vegetable that is why I mash it Partialy .

- Oil - 1 tbsp
- butter - 1/4 slab
- Onion-2 nos ( Finely chopped)
- Ginger -1 inch ( Finely chopped)
- Garlic - 8 cloves ( Fines Chopped)
- Tomato - 1 nos Big ( Finely Chopped )
- Green Chili-2 Nos ( Slit)
- Turmeric Powder -1 tsp
- Coriander Powder -1tsp
- Dry Mango Powder -1 tsp
- Red Chili Powder -1tsp
- Pav bhaji Masala -2 tsp
- Garam Masala -1 tsp
- Salt - to taste

- Cauliflower -3 to 4 florets
- Cabbage - 1/4 ( Chopped)
- French Beans - 8 to 10 ( Chopped)
- Green Peas - 100 gm ( Peeled )
- Carrot -1 nos ( Chopped)
- Capsicum -1 nos ( Chopped)
- Brinjal - small 1 nos ( Chopped)
- Bottle Gourd - 1 slice ( Chopped)
- Potatoes -2 nos (peeled)

Procedure :
- Put all the vegetables in a pressure cooker except peas and add a glass of water to it and keep it on a gas .
- Once the whistle blows simmer the gas and keep it on a medium flame and wait for two more whistles .
- Once done switch off the gas and let the air release then open the pressure cooker.
- Sieve all the vegetables and keep the vegetable in one separate bowl.
- Now switch on the gas and keep the pan over it .
- Add oil and once the oil is hot add onion, ginger and garlic to it and saute .
- Once the onion changes its colour to golden add tomatoes and green chili to it and saute .
- Once the tomatoes are soften add all the dry masala and peas to it except garam masala.
- Stir will and add little water ( add the water which is being taken out after sieving the boiled vegetables).
- Mix it well and cover it and let it cook for 5 to 7 minutes on medium flame.
- Now add all the boiled vegetable except potato and mix well.
- Adjust the water quantity according to the desired consistency.
- Now mash all the vegetables with the help of a spatula.
- then add mashed potatoes ,sprinkle garam masala and mix well.
- Add salt as per your taste mix well.
- Your Pav bhaji is ready to be served .
- Garnish with some fresh coriander leaves and a dash of butter.
Note : Serve hot with Pav, lemon and some onions.
Tip : If you want you can also add small paneer cubes to it but it should be add at last .
