When it comes to food Delhi walas they prefer different variety of food but yes of course when they see their favorite food i.e. chola bhatura they cannot control them selves. You can get different variety of chola bhaturas in different parts of Delhi.
My earliest memory of eating chola bhatura is when i was just 15 years old, my cousin and I were both very fond of eating chola bhaturas so we used to collect money and on every Sunday used to have our favorite breakfast i,e chola bhatura from the near by shop named Kaka Ji ke Chole Bhature in Lajpat Nagar because Mom did not cook chola bhatura at home.at that time we thought that it must be a tough recipe.
As we grew up we started cooking by ourselves. So my cousin and me first tried this mouth watering dish at home using the recipe from one of our friends mom. though it did not turn out very well but it was not bad either. my uncle was the one who relished these bhaturas and praised us . So this recipe is dedicated to my uncle and aunty. my Aunty always used to say that great chefs are not born. every body has to go through the trials and errors of cookin only then the best comes out . I would say that may be we did not turn up the most tasty chola bhaturas but we tried our level best.
Today I would like to share the recipe of this Favorite Mouth Watering Recipe of Delhi.
Although I am not a chef but yes I love to cook and love to try out new recipes and also like to experiment with traditional old recipes . Sharing this recipe with all those moms who want their kids to savour this delicious dish but do not want to compromise with the hygine and health of their kids , they can prepare it at home. For those wives whose constant dilemma is what to cook on Sundays.
So Now here we go...
Ingredients:
For Cholas
Chick
Peas ( Kabuli Chana,s) 250 gm
Dry
Emblica ( Amla) 50 gm
Loose
Tea ( For Potli) Preferably tied in a cotton cloth 1tsp
Cumin 1tsp
Turmeric
Powder 1tsp
Coriander Powder
1 tsp
Garam
Masala Powder 1/2 tsp
Red Chilly Powder
1/2 tsp
Dry
Mango Powder 1 tsp
Cumin Powder 1/2 tsp
Oil
2 tsp
Salt
to taste
Chana
Masala ( optional) 1tsp
How
to make:-
1.Sock
Chick Peas and Emblica for whole night in water.
2. Pressure cook the chick peas and Emblica with the tea bag for 3 whistles until they are soft. Drain and set aside. Discard the tea bag.
3. Heat Oil in a Pan put cumin seeds and wait until they crackle.
4. When the seeds crackle, Add the chana masala, Red chilly Powder, Dry Mango Powder, Turmeric Powder, Coriander Powder, Cumin Powder and Salt and saute for a minute.
5. Add boiled chickpeas and emblica and add a cup of water and boil for 10 to 15 minutes when its done then keep aside and garnish with green coriander fresh leaves.
Ingredients:-
For Bhaturas
Refined
Flour ( Maida) 250 gm
cooking
oil 1tsp
curd
2tbs
more
cooking oil for frying
Salt
to taste
water
1 cup ( for making dough)
How
to make:
1. Combine the flour , Curd , 1 tsp of cooking oil and salt and knead into a firm dough with the help of little bit of water . Knead the dough very well until it is smooth. Cover with a wet cotton cloth and rest the dough for 1/2 and hour. Until the dough is little bit fermented.
2.Divide
the dough into 4 equal parts and roll out into circles.
3. Heat the Oil in a Pan and when the Oil is Piping Hot Deep fry the bhaturas in hot oil until they are puff up and both sides are golden brown.
Serving Suggestion:- Serve hot with choley and sliced onion and lemon wedges.
