I have learnt this dish after the 3 attempt and then my 4th attempt was successful and led to very funny but yet very memorable events .
After the marriage one day my husband bought the chicken and my sister in-law cooked it so when we were eating our dinner although I was not eating non-veg at that time but was aware of how it looks .So when I opened the lid of the pressure cooker to serve the chicken I was not happy with how it was looking there was no color so I asked my husband and sarcastically he said this is the best chicken because our families great chef has made it . I did not understand the joke at that time. So I asked my Sister in-law and my father in-law started laughing so my sister-in-law got annoyed , but later on she told me its me who cooked the chicken what happen I said nothing was just asking because I wanted to know the recipe so that next time I can cook it..
I was so scared to even tell her anything. So now you know the reason why I started cooking chicken , So there was one restaurant in Ghaziabad at that time called Khane-khas my husband told me they make yummy butter chicken so he bought one day and asked my to just taste the gravy if I feel like , I did not used to eat non-veg because my maternal family was not eating. its not like that I was hard core vegetarian its just that we were never introduced to it , first I was little hesitant but later I thought if I married a man and accepted him the way he is so why not his eating habits as well, because when ever we used to go out he never used to eat non-veg and always ordering veg because I was a vegetarian this thing I did not like so later on I also started eating along with him.
So when I was planning to cook the chicken first task was to wash it , I still remember how I covered my nose and wore gloves and everybody was laughing on me. and while washing the chicken I was dissecting each and every part of it . which is which part. Then I remembered that my best friend Priyanka she used to eat chicken and her mom used to make awesome chicken so I called her and her mother and she told me this recipe. at first attempt the gravy was tasty but chicken did not cook well probably I was cooking with bones because with bones it takes longer time to cook. My husband liked the gravy and same my Sister-in-law she also praised so I told my husband can I also taste it he said if I want to. hesitantly I picked up the leg piece and I was not able to chew then I asked my husband its chewy how can you eat this and smilingly he said normally the chicken is softer but you have made it with so much of efforts its not the taste its the efforts and love you have put in they matters to us. and my father in-law and my sister-law both were smiling. The second incident with this dish is very funny I came from my office and it was cloudy out side so I thought of making something special , the recipe came into my mind was butter chicken till now after making few more attempt's I had learnt how to make butter chicken, so I went to market and bought chicken , when I was at the shop that very moment my Sister-in-law called and asked what am I going to make for the dinner I said butter chicken she said make little extra , I said ok and bought big chicken , and in evening I made butter chicken with chapati , at that time my sister in-law was doing evening shift and she used to get relieved at 9 PM and I used to bring her home. she called me at 8.30 PM to pack some chicken and few chapatis and bring , I did the same , so when I went to bring her she took the chicken and chapati from me and gave it to her colleague and then we came back , she told me that her colleagues wife is not at home so she told him its ok she will make arrangements for his dinner thats why she told me to make some extra chicken, ok then next day when she went to her office the same colleague and few more her colleagues were after her to ask me to make this yummy and lip smacking dish once again, and the limit was when her canteen guy telling her madam ji suna hai apki bhabhi butter chiecken bahut achha banati hai ( maam we have heard that your sis-in-law makes very yummy butter chicken) she was so bugged when one day her senior colleague was telling her to bring it once more she said , my Sister in-law doesn't make it for me she just makes it for her husband I just stand nearby her with bowl in hand she shows mercy to me. and when she told I was so embarrassed I said why did you told all this she said some time you have to be rude I was so bugged now enough of butter chicken ..
Now to much of memories now lets just know how to make it so that I hope your friends and family too will relish the same..
Ingredients :-
For marinating
Chicken boneless - 1/2 KG ( washed and cut into medium size pieces )
Curd- 1 Cup ( Beaten )
Salt - to taste
Mustered Oil -1 tbsp
Red Chili paste -1 tbsp
Turmeric powder -1 tsp
coriander powder -1 tsp
Home made masala - Roast and grind the below masalas altogether
Black Cardamom-2
Green Cardamom-4
Cloves -4
Tejpatta -2
Cinnamon -1 inch
Jaifal ( Nutmeg ) -half
Javitri -2
Black pepper-6 nos
Carom seeds -1 tsp
Coriander seeds - 2 tsp
Cumin seeds - 2 tsp
Lemon Juice - 1 tbsp
Procedure -
Note : If you have time keep the chicken for marination over night .
Note - If you have an oven at home you can just roast the chicken in oven it gives nice and aromatic flavour moreover like tandoori chicken .

- Mix all the ingredients in curd and mix well and add the chicken to it .
- Mix and keep it in refrigerator for minimum 2 hours .

- Now after two hours switch on the gas and keep a pan over it on medium flame .
- add little butter and once the butter melts add the marinated chicken and stir it well slowly.
- Now cover it and let the chicken cook on low flame .
- Keep on stiring in between and check
- once the chicken is cooked just dry the remaing masalas on high flame and when the masala is dry take out the chicken and keep it aside .

Ingredients - For gravy
- Garlic Paste- 1 tbsp
- Ginger Paste -1 tbsp
- Onion - 2 nos - ( finally chopped )
- Tomato Paste - Half Cup
- Green Chili - 2 ( Finely chopped)
- Turmeric Powder -1 tsp
- Coriander Powder -1 tsp
- Red chili Powder -1 tsp
- Salt -to taste
- Cashew Paste -2 tbsp
- Fresh Cream Beaten -1/2 Cup
- Ghee -1 tbsp
- 2 Cubes of butter
Procedure :-
- Switch on the gas and keep a pan over it .
- add the ghee and once the ghee is hot add ginger, garlic paste and saute for a minute.
- Now add onions and chopped chili to it and saute till the time onion is brown in color.
- Now add the tomato paste and mix it well.
- Add all the masala ,mix well and cover it on medium flame.
- Let it cook for next five minutes .
- Once the raw smell of masalas is gone add the cashew paste to it and mix.
- Now add the fresh cream and stir ,
- If you feel the gravy is too thick you can add little water to to it,
- Stir and cover , let it cook for next 5 to 7 minutes .
- Now add the chicken to it and stir .
- Cover it and let it cook on medium flame for next 5 to 7 minutes.
- Keep on stiring in between.
- After few minutes give it a good stir and switch of the gas .
- Now add the butter to it.
- Your lip smacking butter chicken is ready to be served .
Note ; Tastes good with chapati,naan or tandoori roti.
