Kuch Dakshin Se - Lemon Rice & Sambar

This dish Lemon Rice and Sambar I had eaten many times at restaurants but never thought of trying it at home so when my son told me to make it oh it seems like a big task to me.
In my kids school there is an option either you can opt for school lunch or if the kid wants he or she can bring their own food. So when my son was in nursery class I opted for the school lunch because he was a fussy eater so I thought let him eat the school food may be with other kids he will mingle and will eat something and more over he will get warm food.
So this thing I carried to KG class also but when he came to class 1st I opted for the home food but he used to love school food so much that he was reluctant to have the school food only , and more over the great reason he gave me that there are certain dishes which he loves eating but not every food. So we had a deal. I asked the class teacher to send me the menu of the each month which they anyways used to share with the parents before hand so that parents should also be aware of what the kids are eating. and which is a good practice I believe. So when teacher shared the menu with me I sat with my son and tick marked the items which he liked so from then I used to follow the same process and gave him his favourite food. Like in school if they are making bread pakora , he will take bread pakora , if they are making shahi paneer I will make shahi paneer for him so that way he will eat the same food and will not be curious to look at other kids plate. So one day I saw it was lemon rice and sambar , Now sambar is not difficult because you get ready made Sambar masala and the instructions are given on the packet how to make you just have to follow the instructions but lemon rice so one of my kids class mate happened to be from Andhra Pradesh and one day when I was talking to his mother  like other moms we were discussing the food habits of our kids and she opened the tiffing to check and showed me see I have made Lemon Rice and he has not eaten . So when the task of making Lemon rice came in from of me I reminded of her she came as a saviour and then I called her there she told me the this very simple , very easy but yet very tasty recipe.. So here we go.

  • Peanuts - Handful
  • Mustard Seeds - 1/2 Tsp

Procedure :-

  • Switch on the gas and keep the pan over it and pour the ghee .
  • Once the ghee is hot add cashew and peanuts and fry them little and take them out.
  • In the same pan add urad dal, chana dal and saute them .
  • Once the dals are golden in colour add mustard seeds along with dry red chili , hing and curry leaves.
  • Now add Turmeric Powder and salt and mix then add the rice to it.
  • Give the rice a good stir and let the rice cook completely. also add the peanuts and cashews to it. ( Generally people add cooked rice but I prefer adding parboiled rice so when the remaing cooking is done along with the spices you will find the taste of rice is more tastier.)
  • Now once the rice is cooked add the lemon juice to it and cover it for next 2 to 3 minutes and give it good stir .
  • switch off the gas your tasty lemon rice is ready to be served.

  • Note : adjust the lemon juice as per your taste if you like more sour add more lemon juice as well if  you like it to be more spicy you can add few slit green chili to it ( Optional)

Happy Cooking !
