Chicken Biryani is something I can have it even if it is mid night , It is one of my favourite chicken dishes .. I have eaten chicken Biryani at many places but chicken biryani which I used to love was of Golkonda Bowl in Noida along with the curry of Nalli Nihari this was my all time favourite But my Luck that the restaurant got closed they had a outlet in Hauzkhas delhi and I tried contacting them but no use so now what to do I tried many Biryanis after that but no one can beat the taste specially their kachhe gosht ki Biryani , when I am writing this post my mouth is still watering with the taste.. so I learnt this Biryani from one of my friends mother , she used to make really good food and she told me this simple , quick , easy and yet tasty recipe and I am glad because My husband likes this one and if he has to chose he always opts for this Biryani rather than going out. When I shifted to Goa me and my husband were more or less on the street for a week buying and arranging house hold stuff most of the time and we used start in the morning and by the time we were back it used to be evening so we used to take our lunch outside and one day we had our lunch in Shere Punjab restaurant Panjim in Goa near Hindu Pharmacy and we wanted to have some quick meal because we had to finish lot of stuff so we ordered chicken biryani and they served it really quick and I must say after Golkonda Bowl the Chicken Biryani I liked was of them it was not very spicy neither bland a perfect blend of spices and quantity was also good , me and my husband had a whole hearted meal there .
Since the weekend is around the corner so making something special is I think in most of the peoples mind so in my mind too, but My son he loves chicken in any-form specially Biryani and chicken Lollypop..
I mostly Opt for Biryani because its easy to cook and moreover this is one pot meal I dont have to think for the other side dishes this is enough for the tummy and soul I will call it my families soul food..

Tip- If you have a saffron at home add few strands of saffron to a warm milk and pour over it , it gives a really beautiful color to your biryani.
Note : Tastes good with vegetable Raita

Ingredients :-
For the Marinade
- Chicken - 1/2 Kg ( washed and cut into small pieces )
- Onion - 2 Nos ( Thinly Sliced and fried )
- Garlic Paste -1 tbsp
- Ginger Paste -1 tbsp
- Curd - 1 Cup ( Beaten)
- Biryani Masala - ( Cumin,Coriander seeds, Jaifal, Javitri,Black Cardamom, Green Cardamom,Cinnamon Stick,Black Pepper,Fennel Seeds ) Roasted and grinded
- Salt to taste
- Red Chili Powder -1 tsp
- Turmeric Powder -1 tsp
- Coriander Leaves - 1 Bunch ( Finely Chopped)
- Mint Leaves - 1 Bunch( Finely Chopped)
- Green Chili - 2 Nos ( Slit)
- Mix all the ingredients along with the chicken and keep it in the refrigerator for atleast 2 hours .
- After 2 hours keep the marinade in a wok and let it cook till the time chicken cooks .
For the Rice
- Basmati Rice - 1 Cup ( Washed and Soaked for 30 minutes)
- Whole Masala- 1 Black Cardamom,2 Green Cardamom, 1/2 Cinnamon Stick,4 to 5 Black Pepper,Bay Leaf -2 Nos ,1 tsp Cumin Seeds)
- 5 Cups of Water
- Salt - 1/2 Tsp
- Make a potli of the spices
Procedure -
- Switch on the gas and keep the water in the wok and add the potli of the spices to it along with the salt.
- Once the water starts boiling add the Rice to it and cook it until it is 3/4 done.
- Once al dente take it off the gas and strain the rice .
For Assembling
- Coriander Leaves - 1 bunch ( Finely Chopped )
- Mint Leaves - 1 bunch ( Finely Chopped )
- Onion- 1 nos ( Sliced and fried )
- Now in a separate vessel spread the cooked chicken half of it and then spread half of the rice over it
- Spread little bit of Coriander and mint leaves along with the fried onion.
- Again spread the remaining Chicken , then spread rice over it and again spread the coriander leaves and mint leaves along with the fried onions.and cover it with some heavy plate and let it cook for next 5 to 7 minutes on low heat till the rice is completely cooked once done take it off the gas and give it a good stir to it.
- Your hot Biryani is ready to be served .
