Stuffed bitter gourd to which we call in Sindhi is bharyal means stuffed Karela means bitter gourd .
this dish is my families favourite but guess what not the Karela only the stuffing.
whenever I make this dish my husband and my sister in-law they both will eat the stuffing and keep the Karela and its me who will finish the Karela later on. Becuause of the nurtricious value of Karela I dont like to waste ..
So this dish seems very tedious or you could say very difficult in making but trust me its not at all difficult and very tasty.
Ya in olden times when people do not have mixer grinder or chopper it was indeed a very difficult to make stuffed karela and so with big joint families. It was a very tiring job for the ladies of the house. because it is so tasty so I am sure no body was able to stop themself at one Karela only.
I still remember it was our summer vacation and my paternal aunt she visited our house for the vacations. She is very close to my mother they are more of sisters rather than sister in-laws. Even whenever my mother calls her . Her kids they tease her by saying Mummy Masi ( maternal aunt ) or your real sister has called.
So when she visited our house she asked my mother to make stuffed Karela and my mother was horrified even about thinking because making stuffed karela mean lot of work and at that time my mum did not have the mixer grinder as well so for making this dish she was suppose to grind the masala on stone-grinder so much of work and that to with so many people at home . So my Aunt told her its ok dont get scared am just craving for the stuffed karela I will make every thing you do the other house hold work. so my mother agreed. That was the first time I ate this dish and the way am telling you the complete story you can just imagine that how much I like the Karelas that I still remember the taste of them.So when I got married I was cooking different dishes being a new daughter in-law am sure like everybody does I was also trying to impress my in-laws by making different dishes . one day I saw so beautiful big karelas in market while buying the vegetable so I was reminded of that dish so I called my mother and she told me the recipe and next day I made the karela for my husband and my sister in-laws lunch and when my sister in-law came from her office she asked me to make them once again she liked the filling and same my husband told but he told me dont give them in my tiffing I got very less every body was just hopping on my tiffin give them in dinner . Thanks to modern day technology I am not scared of making Stuffed Karelas as I just grind all the masalas in grinder or now a days you will get the manual chopper they are too good , you dont even need a grinder because I like to keep the stuffing little thicker.So when you eat you can actually relish the taste of each ingredients.

Ingredients :-
- Karela( bitter gourd )-2 big
- Onion -2 ( Finely chopped or grinded)
- Garlic- 1 flower ( Finely chopped or grinded)
- Coriander leaves - One bunch ( finely chopped )
- Green Chili- 2 nos chopped
- Salt - to taste
- Red Chili powder - 1 tsp
- Turmeric Powder -1 tsp
- Coriander Powder -1 tsp
- Dry Mango Powder -1 tsp
Procedure :-
- Peel the karelas and cut them from the middle.
- Take out all the seeds and keep them aside .
- Now in a pan full of water add 2 tsp of salt and dip the Karelas for next two hours .
- If you want you can keep the Karelas for over nite in refrigerator .
- also keep the seeds by applying salt to them in fridge only.
- Purpose of dipping them in salt water is only that when you will cook the karela the bitterness will be less.
- In the mean time lets prepare for stuffing.
- Chop green chili,coriander leaves ,onion and garlic.
- switch on the gas keep the wok on top of it and now pour oil to it.
- Once the oil is hot add garlic ,onion and green chili , saute them once the onion is translucent add all the masalas along with coriander leaves and mix will.
- Now keep them aside and in the same oil add the karela seeds and fry them until crispy.
- Once done keep them aside as well.
- chop the fried seeds in chopper or grind them and mix them with the masala this will give little crispy and bitter flavour which is very tasty.
- Now when your stuffing is ready just take the karela in one hand and fill the stuffing inside the karela and rap it up with thread so that the stuffing will not come out.
- After that pour little oil in a flat pan and let it get hot once hot keep all the karelas on the pan and let them cook on medium flame.
- Just keep on flipping from all the sides .
- Once you see it is golden in colour from all the sides it means your Karela is ready.
- Take it out from the pan and keep it on an absorbent paper.
- One by one cook all the karelas in the same manner just cut the thread and do the plating.
- Now your bharyal Karla is ready to be served .
