Macher Muri Ghonto is a dish made out of fish head. One thing which I have learnt about Bengalis after marriage that they are in so much of love with the fish that they dont like to waste any portion of the fish. be it a head or any other part .
This dish when I made first time I was not very sure how will it turn up , because I have heard about this dish a lot but I my self have never eaten this , so I asked one of the neighbours who happen to be Bengali about the dish and that lady told be verbally about the dish and its ingredients so when I made this dish for the first time I had my doubts about that how will it taste , but to my surprise it came as biggest compliment to me when my husband ate this . He is the one who never criticises my dish neither he will appreciate , ya he gives his inputs that how can I improve it more and if the dish is up to the mark according to him so without saying a single word he will finish the complete dish and will ask for more and by seeing the smile on his face I understand that he liked it. but this time when I made this dish not even he ate the dish he praised me as well. this came as a surprise to me. and when I asked him how was it , guess what he said it reminded me of my childhood my mother used to make it same way it is indeed delicious. So now came the turn of my son he liked the fish head because the fish was big so the head was so he liked that portion much and was asking it to make it once more..
So this was my first encounter with this dish.

Ingredients :-
- Fish Head ( Preferably Rohu or Katla )
- Rice - 1 Cup ( Washed and Soaked for 30 minutes )
- Onion - 2 Nos ( Finely Chopped)
- Potatoes - 2 Nos ( Cubed )
- Ginger Garlic Paste 1 tbsp
- Green Chili - 2 nos ( Slit)
- Cumin Seeds -1 tsp
- Cumin Powder -2 tsp
- Coriander Powder
- Turmeric Powder - 2 tsp
- Red Chili Powder - 1 tsp
- Garam Masala- 1 tsp
- Sugar - 1 tsp
- Salt- to taste
- Dry Red Chili - 2 nos
- Bay Leaves - 2 nos
- Cinnamon Stick- 1 nos
- Ghee (Clarified butter)-1 tbsp
- Mustered oil - For frying
- Water - 3 and 1/2 Cup
- Marinate fish head with salt and turmeric and keep it aside .
- Switch on the gas and keep the pan over it and pour oil into it.
- Once the oil is hot enough put the fish head into it and let it fry from both the sides.
- Once it is done keep it out to cook down.
- Now Sprinkle some salt and turmeric powder over the potatoes and mix it well.
- then fry the potatoes as well.
- Now take out the extra oil and leave little oil in a pan.
- Now add cumin seeds, cinnamon,dry red chili,bay-leaf into the oil and stir for 1 minutes .
- Now add sugar and stir it.
- then add the onions and ginger garlic paste and saute.
- Once the onion changes it color to golden add all the masalas except salt and garam masala.
- stir it well and then add the soaked rice and give it a good stir.
- Now add the fish head into it but make sure before adding fish head you should break the head into small pieces , so that they cook will and it is easy to eat as well.
- Now add water and cover it on medium flame .
- keep on stiring in between to make sure it should not stick to the bottom.
- once the rice are half done add the potatoes and salt and stir.
- Once you see if the rice are cooked completely switch off the gas and sprinkle garam masala and ghee on top of it and mix it and cover it .
- Leave it for next 5 to 7 minutes.
- Now your Macher muri ghonto is ready to be served .
