Dahi Baigan ( Brinjal Cooked in Curd ) - Kashmiri Cuisine

One Sunday my husband was not in mood to eat any gravy kind of a dish neither he was ready to bring any fish or chicken so that I can make some other dish .. and since the market was very far from my house even I was feeling lazy to go out and bring something . So I went to check the refrigerator and see what is there and what can  I cook but because  of the last day of the week there was not much veggies in the fridge , We used to bring veggies from the nearby haat on Monday now again a big ?.  So when I was checking my fridge what I found was 2 tomatoes ,  1 brinjal and a bowl of curd. First I thought let me make Lassi out of curd but then because it happen to be winter , who drinks lassi in winters and moreover I feel sleepy after drinking Lassi and did not want to sleep specially on Sundays.. So here comes the surprise one of my Sister in-laws friend paid a visit to our house on that after noon and she happens to be Kashmiri.. She asked me what am going to make for the lunch because she herself invited to my house for the lunch and I was so embarrassed to tell her that there was nothing which I could cook infact I was planning to make simple Daal Chawal but then she said what do I have in the fridge and I showed her and she said today she will make the lunch . Me and my sister in-law were feeling very embarrassed  but cause she was like a family we couldn't say anything and on that day I learnt this beautiful Kashmiri Dish called Dahi Baigan from her and it was so yummy that my husband was just licking the bowl and my sister in-law could not stop her self asking for more of it. from the day this dish is my families favorite .


Ingredients : 

  • Brinjal - 1 Round ( Cut into thin and long slices )
  • Curd - 2 Cup ( Beaten along with salt )
  • Kashmiri Red Chili Powder - 1 tsp
  • Fennel Seeds Powder - 1 tsp
  • Ginger Powder -1 tsp 
  • Green Cardamom- 4 nos
  • Hing - 1/2 tsp
  • Salt - to taste
  • oil for frying 
Procedure:-
  • Switch on the gas and keep the pan over it and pour the oil.
  • Once the oil is hot add the brinjal slices one by one and fry them until golden brown in color.
  • Once the brinjal is done take them out on a napkin.
  • Now take out  the access oil from the pan and keep only 1 tbsp oil in it.
  • Add hing and cardamom into it and then add the beaten curd while stirring continuously .
  • Then add chili powder, fennel powder and ginger powder into it and stir it .
  • Now add the fried brinjal as well and pour little water . ( little means very little only 3 to 4 spoons)
  • Now let it boil and once the curd is half dried take it off the gas.
  • Now your Dahi Baigan is ready to be served .
Note : Tastes good with steamed Rice ..
