Aloo Methi Sabji ( Potato cooked with Fenugreek leaves ) North Indian Cuisine

This dish my utmost favorite , this is something which I can eat even if I am half asleep and for a surprise this dish is also the favourite of my son  . But one part which I dont like is cleaning the fenugreek leaves they take a lot of time so whenever I clean them I think that next time I wont bring but whenever I go to market to buy vegetable and if I see Fenugreek leaves I could not resist  and I always end up picking them up in my basket.
so here is the recipe of my favourite sabji.


Ingredients :


  • Fenugreek leaves - 1/2 Kg ( cleaned, finely chopped and washed )
  • Potato - 3 to 4 ( Cut into small pieces)
  • Green chili - 2 slit
  • Tomato - 1 big
  • Ginger - 1 inch ( Chopped)
  • Turmeric Powder - 1 tsp
  • Coriander Powder - 2 tsp
  • Dry Mango Powder -2 tsp
  • Red Chili Powder -1 tsp
  • Salt - to taste
  • Oil - 1 tbsp

Procedure :


  • Switch on the gas and keep the pan over it .
  • Now add the oil and let it get little warm .
  • After that add chopped ginger and then fenugreek leaves.
  • Then add potatoes and sprinkle salt and turmeric powder over it and stir it well now cover it on medium flame.
  • After few minutes stir it again and check if the potatoes have got little tender if yes then add tomato and green chilies and cover it.
  • Again after few minutes add all the masala's and mix it well and cover it on low flame .
  • keep on checking so that it should not get stick to the bottom of the pan.
  • once the potatoes are properly cooked switch of the gas.
  • Your Aloo methi is ready to be served.
  • Tastes good with chapati
