Egg Curry My Way

Egg Curry is something which comes as a handy substitute when you find it difficult to get the answer for one question and that is what should I cook.
I prefer making egg curry because its easy and tasty moreover healthy . So I dont have to make extra efforts to make my son eat something healthy. He loves eating this tasty yet healthy dish with steamed Rice..

Ingredients:-


  • Eggs - 4 Boiled and peeled
  • Tomato -2 finely chopped
  • Green Chili- 2 slit
  • Curry Leaves - 7 to 8
  • Nigella Seeds -  half tsp
  • Turmeric Powder- 1/2 tsp
  • Red Chili Powder -1/2 tsp
  • Coriander Powder -1 tsp
  • Dry Mango Powder - 1/2 tsp
  • Salt - to taste
  • Oil - 1 tbsp
How to make :-
  1. Turn on the gas and heat the oil in a pan
  2. once the oil is hot enough fry the eggs little bit
  3. take out the eggs keep them aside
  4. Now put Nigella seeds and once they start spluttering add curry leaves & chopped tomatoes
  5. Saute the tomatoes then put all the spices and  for a while and pour little water keep stiring for 2 minutes 
  6. once you see the consistency of the gravy is thick enough add the fried egg and pour water into the curry
  7. Pour water as per your liking if you like thick consistency pour less water and if you want little more curry add little extra water
  8. bring it to boil for 5 minutes and now turn off the gas
  9. Sprinkle coriander leaves before serving 
Serve it with steamed Rice tastes very nice.
