Egg Curry is something which comes as a handy substitute when you find it difficult to get the answer for one question and that is what should I cook.
I prefer making egg curry because its easy and tasty moreover healthy . So I dont have to make extra efforts to make my son eat something healthy. He loves eating this tasty yet healthy dish with steamed Rice..

Ingredients:-
- Eggs - 4 Boiled and peeled
- Tomato -2 finely chopped
- Green Chili- 2 slit
- Curry Leaves - 7 to 8
- Nigella Seeds - half tsp
- Turmeric Powder- 1/2 tsp
- Red Chili Powder -1/2 tsp
- Coriander Powder -1 tsp
- Dry Mango Powder - 1/2 tsp
- Salt - to taste
- Oil - 1 tbsp
- Turn on the gas and heat the oil in a pan
- once the oil is hot enough fry the eggs little bit
- take out the eggs keep them aside
- Now put Nigella seeds and once they start spluttering add curry leaves & chopped tomatoes
- Saute the tomatoes then put all the spices and for a while and pour little water keep stiring for 2 minutes
- once you see the consistency of the gravy is thick enough add the fried egg and pour water into the curry
- Pour water as per your liking if you like thick consistency pour less water and if you want little more curry add little extra water
- bring it to boil for 5 minutes and now turn off the gas
- Sprinkle coriander leaves before serving
