Ingredients
( For the dough)
½ Cup Maida
( All purpose flour)
½ tsp carom
seeds
½ tsp yeast
– Mixed in little bit of water
Salt – to taste
1 tsp
vegetable oil
Luke Warm
Water – for knead a dough
( Mix all
the ingredients mentioned above all together and knead a soft dough out of it and cover it with the
wet muslin cloth and keep it aside for half an hour ) and in the mean time
start preparing for the stuffing .
Ingredients ( For Stuffing )
1 Boiled
Potato ( Mashed )
½ Onion (
finely chopped)
1 Green
chili ( Chopped)
Coriander
Leaves ( Finely chopped)
½ tsp –Carom
Seeds
Pinch of
Red chili Powder
½ tsp Cumin
Powder
Pinch of
Garam Masala Powder
½ tsp Dry
Mango Powder
Salt – to taste
( Mix all
the ingredients mentioned above for the stuffing and keep them aside )
How to
cook
- · Take the dough and divide it into two equal portions. Roll each portion into a ball and then flatten it by using a rolling pin. Place a spoonful of stuffing in the center of the flatten dough and close it . Sprinkle some flour over it and roll it into an owl shape paratha .

Switch on the
gas and now heat pressure cooker. Dip the fingers in a little water and moisten
one side of the kulcha and gently press
the moistened side of the kulcha into the inner wall of the pressure cooker,

Place the pressure
cooker upside down over the gas burner and cook the kulcha on high flame for 2 minutes
and then on low flame for 2 minutes
- · Now turn off the gas and take out the kulchas gently with the help of extractor and brush it with melted butter and serve hot.
- · Taste good with Raita or curd
